I have been asked for the recipe for my all-time favorite pie recently, and I thought I would go ahead and share it with my bloggy friends. I love this pie so much that I can eat it all day long!
The best way to describe it is a pecan pie with a twist.
Interestingly, the recipe did not originate from the Orient. Rather, it is a recipe dating back to the Colonial days….
- 1 (9 inch) unbaked pie shell
- 2 eggs, beaten
- 1/3 cup butter, melted
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1 tablespoon distilled white vinegar
- 1/2 cup chopped pecans
- 1/2 cup shredded coconut
- 1/2 cup raisins
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium mixing bowl combine eggs, butter or margarine, sugar, vanilla extract, and vinegar. Beat until smooth. Stir in pecans, coconut, and raisins. Pour mixture into pastry shell.
- Bake in preheated oven for 40 minutes. Cool before serving.

It is called “Japanese” because of the coconut flakes, and way back when, it was thought that coconuts came from Japan. It was purported that Martha Washington had it made for George Washington’s birthday one year.

April 12 -18 is National Library Week! This is the week when libraries and their supporters across the country go all out to celebrate. And there are so many reasons to celebrate, be grateful for and, yes, concerned about libraries right now.
In mid-February Library Journal named Boulder Public Library a 4-star Library. This designation is one that helps bring our library into national view. More than the great attention, for me, the 4-star rating highlights the fact that Boulder loves?and uses?its library!
The news of the 4-star rating came at a very interesting time. Like most libraries, government organizations and businesses around the country, Boulder Library is facing the reality of a major economic downturn. As a part of the network of City departments, the library has put forth several options for how we may approach long-term funding stabilization. These options will be followed by much discussion and input from the public. In the meantime, so many of you have shared your support, concern and heartfelt wishes for maintaining a strong and vital library. Thank you for loving your library.
The next several months will reveal how our City will deal with the challenges we face economically. Library staff members are working diligently to offer the best services, make wise decisions and care for the library that we all share. In the face of these challenging times, we?ll continue to live up to our 4-star status.
Speaking of stars, Boulder Library will be hosting a shining star in the world of books through our One Book, One Boulder County program. Legendary author Katherine Paterson will join us as we cap off our tribute to her classic book Bridge to Terabithia. Included in the program line-up is a viewing of the film version of the book on Friday, April 3 at 7 p.m., which will be introduced by the young star of the movie, AnnaSophia Robb. It’s 4:11 am est and I have one really crappy reason for being up this early…work, too boring of a story. Since I’m here and not doing any of it, what better time to let you know what has been going on. SOooooo, the laptop is still jacked up but looking to get another really soon.\xA0What do you think Mac vs PC?\xA0 I recently had some\xA0extended family members insist Macs were for dumb people, I couldn’t help but laugh and hardly\xA0entertain the subject, WTF? It really stinks not having either.\xA0This has not been much of a burden as far as the fitness blog goes because I haven’t had very much exercise being sidelined by ‘kidney stones’. I know, I know… the pain caused by them is no where near my legs and feet, BUT\xA0 a supernatural hand grabbing your back and side at the same time is\xA0 REALLY\xA0distracting. The doc\xA0says they will pass and for the most part I feel fine now \xA0but every now and again the pain flares up and becomes a nuisance. I am beginning to think it is not stones at all.\xA0This is taking a bunch longer than the last time, sucks! \xA0 Who knows maybe he is right but either way I look forward to restarting progress towards 13.1 this upcoming weekend, can’t wait. I have not gotten out to run in a couple weeks so it will probably be a considerably shorter run.\xA0\xA0My exercise recently\xA0has been me trying to do a head stand, they seemed much easier in my younger years and on the same day several scores of abdominal sets consisting in a variety of targeting areas. Oh yeah and the occasional beer curl. I only have roughly 16 weeks before the half marathon, barring any additional set backs, I think I have enough time.\xA0This weekend I plan on having a good run consisting of quarter mile intervals and some core\xA0workouts too. I will\xA0update\xA0with Runkeeper\xA0through here.

For whatever reason, comedies tend to get the shaft come awards season and year-end lists. But there is definitely something to be said for a great comedy film (it?s one of the hardest types of film to do well). Thus, in keeping with the listmania theme of December, here is my list of the ten best comedies of 2007.
10) Waitress: Keri Russell?s gleefully na\xEFve piemaker was one of the funnier female comedic characters of the year.
9) Dan in Real Life: Peter Hedges? romantic comedy gave Steve Carell a chance to tone it down a bit (even opposite Dane Cook), and the result was a solid, completely satisfying and sometimes hilarious film.
8) Enchanted: This film proved that Disney can do ironic self-referential comedy really well, though the real story is definitely Amy Adams, who gave one of the best comedic performances of the year as Princess Giselle.
7) Hot Fuzz: This British send-up of everything from buddycop action films and Bruckheimer-brand mayhem to Tony Scott-inspired quickcut absurdity was by far one of the most enjoyable comedies of the year.
6) Knocked Up: It was the year of Seth Rogan and Judd Apatow, and this was their crowning achievement. Rare is the film that wins over the elitist film critics, the populist frat of the land, and the occasional conservative Christian (for the pro-life undertones of the film).
5) Death at a Funeral: This great British ensemble pic turns one of culture’s most sacred ceremonies into a circus of comedic insanity and fun British colloquialisms (?are you mental??).
4) The Darjeeling Limited: Wes Anderson?s film was maybe not as funny as his others have been, but in its own weird ?too cool for school? way, Darjeeling definitely packs in the subtle jokes and understated character humor.
3) My Best Friend: This little-scene French film had me smiling ear to ear from nearly the first frame to the last. It?s a joyous, innocent, hilarious buddy comedy with some pretty profound themes to boot.
2) Lars and the Real Girl: Not exactly a comedy in the proper sense, but some of its scenes are definitely among the year?s funniest. Ryan Gosling and Paul Schneider deliver simultaneously hilarious and heartbreaking performances in one of the best overall films of the year.
1) Juno: This pint-sized indie masterpiece is yard-for-yard the funniest film of the year, even when at its heart it might feel like a tragedy. It?s all about growing up?negotiating that awkward transition from childhood to adulthood, and Ellen Page (as Juno) makes the whole thing seem effortless and sweetly ridiculous.
Bonus: Top Five Guilty-Pleasure Movies of 2007
5) Beowulf: It may be an offense to the English majors in the room (myself included), but this motion-capture action epic is a whole lotta fun. ?I? Am? Beowulf!?
4) The 300: By all means a ridiculous piece of techno-pop fluff (and ?the new Braveheart? for Wild at Heart youth ministries everywhere) but this sword-and-sandal epic is undeniably a fun indulgence in cinematic excess.
3) The Mist: Stephen King is always good for some cheap thrills at the movies, and this is no different. The monsters are great, and Marcia Gay Harden plays a deliciously evil Christian fanatic (always fun!).
2) Live Free or Die Hard: Bruce Willis rocks it in this over-the-top action romp. It?s mostly brawn but does have some brain (unlike something like Transformers), and features vintage Bruce moments like the ?Yippee Ka Yay (sound of gunshot).?
1) 28 Weeks Later, Planet Terror and Death Proof (tie): Nuance is nowhere to be found in this go-for-broke trio of zombie/musclecar/violent mayhem. Don?t miss the ?helicopter as weapon of mass destruction? moment (in both 28 Weeks and Planet Terror) and the insane final car chase scene in Tarantino?s Death Proof.
Although Summit Entertainment is lowering expectations, suggesting the film will only pull in around $85 million in its openning, many box office mavens think the totals will be closer to $100 million.
Some even think it will go higher.
Deadline Hollywood quotes one skeptical exec from a rival studio:
I have heard estimates all the way up to $120M for the opening weekend, but I just don’t buy it.\xA0I wouldn’t be surprised if it pushes the century mark. But it’s hard for me to say it goes over that mark.
This represents a pretty broad spread from $85-120 million.\xA0 What do you guys think?
I’m not going to lie to you, I loved V, but I also had some PTSD watching this.\xA0 I had these horrible flashbacks of a much beloved show that was lost too soon…..INVASION.\xA0 Full disclosure…Liz and I will be probably be scarred for life at the loss of invasion and it will always be at the back of my mind when watching alien TV shows.\xA0 My fears are not helped any by the fact that ABC is running four episodes this month and then none until MARCH!!!\xA0 This scares me and makes me hesitant to love this show, but I guess I have to just toughen up and hope ABC doesn’t break my heart again. 
So, back to V.\xA0 As stated above I loved the first episode.\xA0 We got to meet everyone tonight and the show did a great job of introducing everyone clearly.\xA0 I didn’t know I missed Scott Wolf until I saw him playing Chad Decker the pretty boy reporter tonight.\xA0 Scott learned a hard lesson when he decided to not be a tough journalist with the aliens from the start, they are now using him as there PR man to promote how good they are (when we all know they are evil, and which the show clearly shows us in the first episode!).
Morris Chestnut is Ryan Nichols.\xA0 I’m not clear on what Ryan’s job is in this show, he walks around in suits with a briefcase, lucky for us Morris Chestnut looks hot in a suit.\xA0 Anyway, turns out he is not only super professional he is also an alien who has turned on his kind and is going to help the humans fight back against the V’s.
Elizabeth Mitchell from Lost plays Erica Evans, our FBI agent who works in counterterrorism.\xA0 She discovers the truth about V when she infiltrates what she thinks is a sleeper cell meeting.\xA0 Turns out V is the sleeper cell and the meeting she is at is the resistance.\xA0 When the meeting gets attacked and everyone gets killed, Erica is the one who takes over the resistance movment.\xA0 The real twist in her story is that her son doesn’t see the bad in the aliens and seems to be falling for an alien girl.
Joel Gretsch as Father Jack Landry rounds out the founding group as one of the first doubters of the alien.\xA0 When the vatican promotes them as God’s children, Father Jack questions this and ends up at the resistance meeting as well.\xA0 He manages to survive and seems to be ready to team up with Erica to lead the resistance.
Favorite casting so far is Alan Tudyk as Dale Maddox.\xA0 He is Erica’s partner and I’m guessing boyfriend by they way they talk to each other.\xA0 He ends up being an alien and ***apparently*** killed by Erica.\xA0 I personally hope he is back for me because I love him.
I am excited\xA0to see more of this\xA0show not only because it filled a huge gap in my Tuesday night TV, but also because I was totally enthralled from beginning to end.
